Ingredients
For the cake…
220g all-purpose flour
300g granulated sugar
75g unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs
240ml whole milk
120ml vegetable oil
2 teaspoons vanilla extract
240ml hot water
For the fudge swirl…
1 cup Gardiners handmade fudge
30ml heavy cream
For the frosting…
230g unsalted butter, softened
440g powdered sugar
50g unsweetened cocoa powder
1/2 teaspoon salt
120ml heavy cream
2 teaspoons vanilla extract
Instructions
- In a small saucepan, heat the fudge and heavy cream over low heat, stirring continuously until smooth and well combined. Remove from heat and set aside.
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until well combined.
- Gradually stir in the hot water until the batter is smooth.
- Pour the batter evenly into the prepared pans.
- Spoon dollops of the fudge swirl mixture onto the cake batter in each pan.
- Use a knife or skewer to gently swirl the fudge into the batter to create a marbled effect.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar and cocoa powder, mixing on low speed until combined.
- Pour in the heavy cream and vanilla extract. Beat on high speed until the frosting is light and fluffy.
- Once the cakes have cooled completely, place one layer on a serving plate or cake stand.
- Spread a generous layer of chocolate frosting over the top and carefully place the second cake layer on top.
- Frost the top and sides of the cake with the remaining frosting.
- Decorate with extra fudge pieces or drizzle with melted fudge for an extra indulgent touch.
