Decadent Chocolate Fudge Cake Recipe

Ingredients

For the cake…

220g all-purpose flour
300g granulated sugar
75g unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs
240ml whole milk
120ml vegetable oil
2 teaspoons vanilla extract
240ml hot water

For the fudge swirl…

1 cup Gardiners handmade fudge
30ml heavy cream

For the frosting…

230g unsalted butter, softened
440g powdered sugar
50g unsweetened cocoa powder
1/2 teaspoon salt
120ml heavy cream
2 teaspoons vanilla extract

Instructions

  1. In a small saucepan, heat the fudge and heavy cream over low heat, stirring continuously until smooth and well combined. Remove from heat and set aside.
  2. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
  3. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until well combined.
  5. Gradually stir in the hot water until the batter is smooth.
  6. Pour the batter evenly into the prepared pans.
  7. Spoon dollops of the fudge swirl mixture onto the cake batter in each pan.
  8. Use a knife or skewer to gently swirl the fudge into the batter to create a marbled effect.
  9. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  11. In a large bowl, beat the softened butter until creamy.
  12. Gradually add the powdered sugar and cocoa powder, mixing on low speed until combined.
  13. Pour in the heavy cream and vanilla extract. Beat on high speed until the frosting is light and fluffy.
  14. Once the cakes have cooled completely, place one layer on a serving plate or cake stand.
  15. Spread a generous layer of chocolate frosting over the top and carefully place the second cake layer on top.
  16. Frost the top and sides of the cake with the remaining frosting.
  17. Decorate with extra fudge pieces or drizzle with melted fudge for an extra indulgent touch.
