If you’re a fan of both scones and fudge, then you’re in for a delightful treat!

These fudge scones combine the best of both worlds, offering a rich, fudgy experience for the perfect sweet treat. Imagine biting into a soft  scone with luscious chunks of fudge melting in your mouth. Sounds heavenly, right?

Ingredients

250g self-raising flour
25g unsweetened cocoa powder
100g granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
115g unsalted butter, cold and cut into small cubes
100g Gardiners Fudge (Chopped into smaller pieces)
120ml milk
1 large egg
1 teaspoon vanilla extract

Instructions

  1. Preheat the oven…
Start by preheating your oven to 200°C (180°C fan). Line a baking sheet with parchment paper or a silicone baking mat to ensure the scones don’t stick.
  2. Prepare the scone dough…
In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt. This will ensure all the dry ingredients are well combined and free of lumps.
  3. Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the dry ingredients until the mixture resembles coarse crumbs. The little chunks of butter are what will give your scones their flaky texture.
  4. Incorporate the fudge pieces…
Gently fold the fudge pieces into the flour and butter mixture. Be careful not to overmix, as you want to keep the fudge chunks intact for delicious pockets of gooey goodness in your scones.
  5. Combine wet ingredients…
In a separate bowl, whisk together the milk, egg, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients. Stir until just combined, being cautious not to overwork the dough. Overmixing can lead to tough scones.
  7. Shape the scones…
Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a circle about 2.5 cm thick.
  8. Use a knife or a bench scraper to cut the dough into 8 wedges.
Place the wedges on the prepared baking sheet, spacing them about 5 cm apart to allow for spreading as they bake.
  9. 6. Bake the scones…
Bake in the preheated oven for 15-18 minutes, or until the scones are set and a toothpick inserted into the center comes out clean. They should have risen beautifully and developed a slight crust on the outside.
  10. Remove from the oven and let the scones cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
