There are very few things that can top the taste of homemade ice cream, but this homemade Scottish Tablet ice cream takes it to a whole new level.
Perfect for summer, this recipe is the perfect amount of sweet with a bit of crunch of our handmade tablet. All you need is an ice cream maker and a few simple ingredients.
Ingredients
- 1 cup heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup crumbled Gardiners Scottish tablet.
Method
- In a saucepan, combine the heavy cream, whole milk, and granulated sugar.
- Heat the mixture over medium heat, stirring occasionally, until the sugar is completely dissolved. Once the mixture is just beginning to simmer remove it from heat.
- Stir in the vanilla extract until well combined and let the cream mixture cool to room temperature.
- Once cooled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Once the ice cream is churned, fold in a healthy dose of the crumbled Scottish tablet until evenly distributed throughout the mixture. (The beauty of homemade ice cream is that you can add as much as you want!)
- Transfer the ice cream to a freezer-safe container, cover, and freeze for at least 4 hours, or until firm.
- Serve the Scottish Tablet Ice Cream in a bowl or ice cream cone, and enjoy the sweet flavor with delicious bites of Scottish tablet throughout!
